  1. Salpimenta la carne y pásala por harina. Pon el aceite en la sartén a fuego vivo, dora la carne por ambas caras. No eches toda de golpe o “se cocerá”, dórala en varias tandas. Reserva.
    Corta las cebollas y un diente y medio de ajo. No es necesario que estén muy finas, en dados medios es suficiente. Añádelas con dos pizcas de sal en una cazuela de acero inoxidable. Cocina a fuego medio durante 15 minutos.
  2. Echa el vaso de vino. Espera 2 o 3 minutos, hasta que evapore el alcohol.
    Pon caldo hasta que cubra la mitad de la carne, no lo llenes hasta arriba.
    Tapa la olla y cuece a fuego medio 1 hora
  3. Destapa la cazuela, baja el fuego y cocina 1 hora más
    Retira la carne. Reduce la salsa a fuego medio hasta que tenga cierta consistencia. Pásala por el robot para que quede fina. Vuelve a echar las carne y cuece 5 minutos Prueba y ajusta de sal.
  4. Prepara la gremolata: pica medio ajo y un puñado de perejil lo más fino que puedas. Añade la ralladura de medio limón.
