  2. A continuación vamos a poner una fina capa de sal sobre nuestra bandeja de horno.
  3. Colocamos encima nuestra dorada.
  4. Y vamos cubriendo con la sal desde la cola hasta la cabeza. La cabeza no es necesaria cubrirla del todo. Vamos a ir apretando la sal hasta que veamos que se ha cubierto por completo.
  5. Ya con el horno precalentado introducimos en la zona media del horno. Horneamos durante 25 minuto a 200ºC.
  6. Ahora vamos a retirar la sal. Para ello lo mejor es utilizar dos tenedores. Vamos buscando el cuerpo del pescado y retirando. Saldrá la sal en bloques.
  7. A mí me gusta aprovechar y retirar la piel que saldrá sola y servir los filetes de dorada ya limpios.
  8. Acompañamos con una ensalada y el resultado es brutal.
  9. Pocas veces vais a probar un pescado más jugoso que el preparado con esta técnica.
