  2. 200 g Edamame (pelado y cocido)
  3. 1 Aguacate maduro (cortado en rodajas)
  4. 1/2 Pepino holandés (cortado muy fino con mandolina)

  6. 1/2 Mango (cortado en cubitos)
  7. Algas wakame
  8. Sésamo tostado
  9. Sésamo negro

  11. 3 Cucharadas Vinagre de arroz
  12. 2 Cucharadas Azúcar

  1. Cocemos el edamame en una olla con agua hirviendo con sal, durante 4 minutos. Escurrimos, dejamos enfriar y sacamos las habas de soja de la vaina. Reservamos
  2. Cocemos el arroz (con un poco de aceite de sésamo, para que esté más aromatizado) y los langostinos. Reservamos.
  3. Hidratamos las algas wakame. Y las cocemos 10 minutos. Condimentamos con un poco de aceite de sésamo y semillas de sésamo. Reservamos.
  4. Mezclamos el vinagre de arroz con el azúcar —para el sirope de arroz— y se lo añadimos al arroz. Mezclamos bien y reservamos.
  5. Cortamos el pepino con la mandolina para que sea muy fino, el mango a tacos pequeños y el aguacate a rodajas. Lo dejamos todo preparado cerca de la mesa de trabajo para cuando emplatemos.
  6. Todo listo:

Para presentar: en cuencos grandes ponemos una base de arroz (3 cucharadas), un puñadito de edamames, 1/3 de aguacate a rodajas, unas rodajitas de pepino muy finas, el mango a cubitos, 6 langostinos pelados, en el centro un poquito de alga wakame, y espolvoreamos un poco de sésamo tostado y sésamo negro.
